Oatmeal Raisin & Cranberry cookies

What else is there to do during a snowstorm? Bake, eat, and shop online. I did all three on Saturday.

Recipe:
1/2 cup (1 stick) softened butter
2/3 cup light brown sugar, packed
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups oats (not instant!)
1/4 cup raisins
1/4 cup dried cranberries
1/4 cup chocolate chips
  • Preheat oven to 350°F.
  • In a large bowl, cream (<--a setting on your mixer) together the butter, brown sugar, egg and vanilla until smooth
  • In a separate bowl, whisk the flour, baking soda, cinnamon and salt together
  • Stir this into the butter/sugar mixture.
  • Stir in the oats, raisins, cranberries, chocolate chips
  • Scoop teaspoonfuls of cookie batter onto a sheet (2 inches apart on a lined baking sheet) and then chill in the fridge for 15 minutes. (the cookies will be a little thicker if they are chilled this way)
  • Bake them for 10 to 12 minutes and when edges are golden but appear to be undercooked on top.
  • Allow cookies to sit on the hot baking sheet for five minutes before cooling on a rack.
