white chocolate raspberry cheesecake

today I am thankful for my white chocolate raspberry cheesecake that turned out perfectly.

i'm also thankful for all the people who take the time to read this blog and send me such nice emails and comments. hope you all have a happy thanksgiving and a productive black friday ;)


white chocolate raspberry cheesecake recipe:
ingredients:
1 cup chocolate cookie crumbs (i used oreos and scraped the cream off with a cheese knife, put them in a plastic bag and used a mallot to turn them into crumbs)
3 tablespoons white sugar
1/4 cup melted butter
1/4 cup seedless raspberry jam
3 packages of 8 oz cream cheese
1/2 cup sugar
1/3 cup sour cream
3 tablespoons all purpose flour
1 tsp vanilla extract
3 eggs (lightly beaten)
12 ounces white chocolate (cut into tiny pieces)

preheat oven to 325 degrees F
1. mix cookie crumbs, 3 tablespoons sugar, and melted butter into a bowl. press this mixture into the bottom of a 9 inch springform pan
2. evenly place chopped white chocolate over cookie layer
3. melt raspberry jam in a bowl (i microwaved it)
4. in a large mixing bowl, mix the cream cheese with 1/2 cup sugar until smooth. then add eggs into mixture. blend in the vanilla and mix the batter until it's smooth and even.
5. pour half batter over the crust
6. pour raspberry sauce over first batter layer. i used a knife to swirl the raspberry into the batter (try to do this evenly so that each slice contains raspberry!)
7. pour the remaining batter over the top
8. bake for 55-60 minutes. the top should be a golden brown color when it's ready.
9. cool it at room temperature and then cover it with plastic wrap. refrigerate for at least 8 hours.
